A recipe, what?! I know! It’s crazy!! Pink Lemonade cookies : ) Of course these aren’t exactly rocket science, so if you are like me and just aren’t quite the baker in the family, you can totally make these!!! Ok, I say that, but I won’t lie. The first time I tried to make these I totally messed them up. Do I get an excuse? Because I have one! It was really late, and in my head I knew I had to double the recipe for the party… but I wasn’t going to that night. So I doubled the cool whip and nothing else! So don’t do that.. I think that’s the only way you can mess up… and of course I already figured that out for you! : )
Let's make some Pink Lemonade Cookies!
I have to warn you though, these little pink lemonade cookies are addicting! Addison had a major meltdown when I cut her off… I think she would have ate every single one, and she absolutely NO intension of sharing either!
My favorite thing about these cookies: 3 ingredients! Well then you top with powdered sugar, but so easy to make… a little messy, but fun for the kids!
{Ingredients}
- 1 box of strawberry cake mix
- 1 egg
- ½ of an 8 oz container of cool whip.
- powdered sugar
(optional: a little bit of lemon zest)
{Recipe}
Preheat oven to 350
First pour some powdered sugar in a bowl. No measurement, you will just be using this to dip your hands in so the cookies don’t stick to you! Do NOT skip this step or you will be licking cookie dough off your hands for a good hour! Set this aside!
Put all your remaining ingredients into a bowl
Ok, so at this point you are probably thinking… aren’t you forgetting something? Nope that’s it! Start mixing it all together. Just a little side note, it helped me a little to whip the egg a bit before I put it in there… it seemed to spread through easier.
So just stir and stir and stir until it looks like this:
I timed it, but forgot to write it down. It took me somewhere like 6 minutes. That doesn’t sound long, but when you are stirring a very sticky batter… it is! : )
At this point I added in a little lemon zest for some lemon flavor, but this is up to you and how much you want to add, I just eyeballed it.
Now, get out some cookie sheets because you will probably have to do it in two batches.
(my sister covers her cookie sheets in parchment paper, but I didn’t… it’s up to you)
Now you are going to dip your hands in the powdered sugar and the get a small amount of the batter and roll it into a ball, about 1 inch in diameter. Then place on the cookie sheet. You will need to keep your hands covered in the powdered sugar throughout the process! Repeat until all your batter is gone.
I sprinkle mine with powdered sugar once they are all done, makes it kinda pretty!
Put in the oven and bake for 7-10 minutes. You really just have to work with your oven, they are a little sensitive! You don’t want to over cook them. When you pull them out they will be soft, but once they cool they stiffen up.
Let them cool for a few minutes, then remove and put on a cooling rack.
Now you have pretty pink lemonade cookies!

Ok, I made these just now and they are FANTASTIC! I made the cookies a little bit bigger than you did, so they weren't quite done even after 10 minutes. But I love the soft, chewy centers so it worked out great! They are super yummy and my husband loves them too; thanks for the recipe!

These look so good and so summery! We make chocolate crinkle cookies for Christmas, we roll the balls in powdered sugar and they crack as they cook and end up looking like those, only brown not pink.

Do you have heavy whipping cream there? If so you can make your own! My sister made these same cookies, just with a different cake mix and mint leaves instead of lemon zest. I'm not sure what i've done wrong-the only thing I changed is that I used lemon cake mix instead of strawberry. I used regular cool whip as it didn't say fat free and my batter looked wetter than that pictured above. I've put the cookie sheets back in several times as the cookies are definitely NOT done (still gooey in the middle). So far I'm up to about 16+ minutes. My oven temp is okay too as I've been making lots of cookies and they've been true to the time suggested. Oh well.....perhaps another try....

Yes, thanks so much. Here's an update for anyone trying this recipe: I used Duncan Hines lemon supreme and it may have been more moist so I baked a good bit longer (16+ minutes). The cookies ended with a nice crunch on the outside and a lovely chew on the inside. The upshot: my family LOVED them so I'll definitely make these again. Already thinking a spice cake would be nice for fall.

Thanks so much for letting me know. The moist mix could have very well been why it appeared wetter than what I show in the picture. It is also sensitive to how big the cookies are when you roll them into balls. I did just move too, so maybe my oven might be a little off. I haven't really tested it to much. Thanks so much for keeping me updated! The spice cake sounds delicious!!! They would be fun in some kind of orange for halloween, I might have to do that ; ) I love these cookies.. I'm not big on sweets so these are always my favorites! Also, whenever I messed up the first time I used the whole thing of cool whip and they still turned out good, they just looked like regular cookies instead of little puffy balls so it's ok if you add to much of that, you just have to adjust your cooking time. I'll add in the recipe about the cooking time so others can be aware!! I'm so glad you like them!

Am I the only one that thinks it's weird that these are supposed to be strawberry LEMONADE cookies and the only lemon involved is an OPTIONAL lemon zest? If you don't use the option...won't you just have strawberry cookies? And, for those of us non-bakers, how are we supposed to "eye-ball" the lemon zest..? I have no clue how much zest will make these taste just lemon-y enough to have that lemonade feel, but not overpower the cookie.. Is there any way you could give an actual measurement to make these taste like strawberry lemonade cookies. I love the idea (I've had strawberry lemonade cupcakes before and they're delicious! But they definitely have a very distinct lemon flavor) but I don't want to end up with plain strawberry cookies... Thanks!

Hi Brittney-I am a lemon-addict so didn't use the strawberry cake mix-used lemon instead and added 1 tsp Penzeys lemon extract and the zest from one lemon. My result was nicely lemony so if you used the strawberry mix it might just end up being a delicious strawberry lemonade flavor.

I'm sorry that you feel the cookies are mislabeled because the lemon zest is optional. I stated it was optional purely so that others would know that it is not required to make the cookies. Yes, it wouldn't have a lemonade flavor when you don't use it, but I assumed that would be obvious if you someone chose not to use it. As stated in the first paragraph in the post, I am by no means a baker. This is just something I made for my daughter's Pink Lemonade Party, several people asked for the recipe so I posted how I did it. Lemon zest can be quite a sensitive thing. I am not HUGE on lemon so I probably used about a teaspoon to a tablespoon just to give it a little bit of a lemon flavor. If you would like additional information on using lemon zest I would search google for someone who is more familiar with it than I am. If you decide to use this recipe I would suggest starting there and then adding to it if you would like more of a lemon flavor that that offers. But that is just my suggestion, I cannot guarantee how it will turn out. I can only tell you what I did.
If you are looking for a recipe that has a distinct pink lemonade flavor, you might try this one. I thought about using this one before using the one I made.

It seems like if you were going to make a large batch you could go with one box of lemon cake and one box of strawberry, and probably end up with a pretty fabulous pink lemonade flavor... just a thought, I'm not much of a baker and haven't tried these yet 🙂

It's the lemon zest. It goes along with the pink lemonade party.... So I guess technically Strawberry Lemon. ; )
