Individual Cheesecake Hearts
I wanted to make a treat for my family and my picky children have finally discovered the yumminess of cheesecake. With Valentine’s Day right around the corner I am seeing hearts everywhere and thought it would be fun to make this Cheesecake Hearts recipe!

You can use your favorite cheescake recipe to make these. For me I like quick and easy but still super tasty – so I went with my favorite boxed Jell-O Cheesecake mix. I wanted to make up a 13×9 pan so I needed two of the cheesecake mixes. Be sure to line your 13×9 pan with foil and then prepare the cheesecake according to the instructions. Chill for several hours before you make your hearts shapes.
Making the hearts is super simple. Gently lift out the cheesecake using the tinfoil as handles. Place on a flat surface and pull the tinfoil on the sides down flat. Press a heart shaped cookie cutter into the cheesecake. Choose the right sized heart cookie cutter for the portion sizes you want to serve.
Using a small spatula transfer the heart to a plate.
To get the cookie cutter off the cheesecake without a huge mess I used a small spoon to press down in the center of the cheesecake. It slid right out – it did leave a little indentation but that is no big deal because that was covered up by the sauce. For my sauce to go on top I used my Strawberry Sauce recipe – this could be made with Strawberries, raspberries or even a mix of berries – so yummy!
I was able to get six cheesecake hearts out of the 13×9 pan (and the scraps of cheesecake were eaten by someone who will remain nameless). The amount you are able to get will depend on the size of your cookie cutter – my cookie cutter was between 2 1/2 – 3 inches.
