What is better then mint? Well for me that would be mint with chocolate - such a wonderfule flavor combination! Today for National Mint Day I am sharing my Peppermint Fudge. It is very similar to my Twix Fudge just with different flavors added in. I am also sharing some more amazing mint recipes after I share mine. #nationalchocolatemintday

Peppermint Fudge
Ingredients needed
- 1 Stick of Butter
- 4 Cups Sugar
- 1 Large Can Evaporated Milk
- 2 packages of peppermint or mint chocolate pieces (1 package for fudge and 1 package for top of fudge)
- 2 packages of Chocolate Chips (I use milk but just use your favorite)
- 1 large chocolate bar (again I use milk because it is my favorite)
- 1 Jar of Marshmellow Creme
I always get everything prepped and ready before I turn on the heat. Yes you will be stirring for what feels like forever but once it is ready to pull off the heats things move fast. So open all of your packages and get things ready to put in the pan as needed.
Like a cookie sheet with tinfoil. I do this to make it easier to get the fudge out. Now place your butter, sugar and the can of evaporated milk in a sauce pan.

Turn the heat on medium. Mix the three ingredients together and slowly they will all dislove into each other. Keep a slow stir while things get heating up. Always keep stirring so it doesn't burn. When the sugar mixture begins to boil start a timer for 6 and ½ minutes. Keep stirring for the entire time.

Once the 6 ½ minutes are up remove the pan from the heat and immediately and the marshmallow creme. I like to dip a spoon into the hot mixture and use that spoon to get the marshmallow cream out of the jar. The heat from the spoon helps get it out much quicker.
While stirring in the marshmallow cream begin to add in your chocolate and mint chocolate. Be sure to keep stirring until everything is nicely incorporated. You should stir until there is no more white from the Marshmallow cream.
Pour into your pan then take the other package of peppermint chocolate pieces and sprinkle over the top of the fudge.

Now it is time to be patient and let the fudge cool. You can cool it on your counter top or even in your fridge or freezer. However, if you do a fast cool like in your fridge or freezer it can make the chocolate become dull in color.
Once it is nice and cool you can easily remove it from the pan by pulling it out by the tinfoil. Now you can easily cut the fudge into squares!

So creamy, delicious and minty!
