Rotisserie Chicken Salad is the perfect way to make something quick with a ready-made chicken.

Maybe you're gearing up for back to school, or maybe you're trying to enjoy the last few picnic days of summer before Fall schedules take over. Or perhaps you are just looking for an easy recipe to keep your hungry families happy! Either way this Rotisserie Chicken Salad Recipe with my new favorite produce item, jicama, is sure to be a hit!
Keto Chicken Salad Recipe
One of my favorite things about this recipe is it utilizes a rotisserie chicken from the grocery store. This allows for a quick healthy meal, but provides the option of a more exciting lunch or dinner!
My husband and I recently started keto and it's always nice to have recipes like this as a simple go to when life gets busy and you need something healthy and you need it fast!
How to Make Rotisserie Chicken Salad
To begin I remove the meat from the rotisserie chicken. You can choose to only use the white meat if you want, or you can use both the white and dark meat. I like to leave the skin on as well, but again that's optional. If you're going with this recipe for keto or have any other dietary restrictions, make sure the rotisserie chicken doesn't have any added ingredients. I used a plain rotisserie chicken for this recipe.
After removing the meat it's time to chop up the remaining ingredients and mix them together.
Jicama, while not traditionally seen in Chicken Salad, is my addition to this recipe. It adds a fun new flavor profile and the much craved crunch!
Once all ingredients are chopped and prepped, it's time to mix everything together and enjoy!
Ingredients
- Rotisserie Chicken - This allows for quick meal prep, you can also add boiled chicken.
- Jicama - While this might be a new to use veggie, it's a delicious addition to a chicken salad, however you can easily omit this if it's not your style.
- Celery - I like to dice mine up really small to let the flavor fully absorb into the chicken salad
- Grapes - This is an optional ingredient. I love the freshness it adds to the recipe, but if you are on keto you might not want the additional carbs, however I use very little in this recipe.
- Mayonnaise - Feel free to add or take away the may as you see fit. I prefer more mayo to mustard, but you might want to play around with the ratio of mustard to mayo
- Mustard - I love the tanginess mustard brings to this dish, but if you don't love mustard you can easily leave it out.
- Seasonings - To keep this recipe simple, quick, and easy I added dry seasonings, however you can always cut these up fresh if you prefer. Just make sure you are adjusting the quantities to allow for fresh vs. dried.
Overall this recipe is hard to mess up. It's just a mixture of ingredients that blend well together and can easily be adjusted to your liking. Just remember it's always easier to add more of something than to take it away!
Rotisserie Chicken Salad
Ingredients
- 3 cups Shredded Rotisserie Chicken
- ½ cup Jicama diced
- 1 stalk celery diced
- ⅓ cup mayonnaise
- 1 tablespoon mustard
- 1 teaspoon minced garlic
- 1 tablespoon parsley
- 1 tablespoon dill
- 1 tablespoon chives
- Almond Slices optional
- Grapes optional
Instructions
- Hand shred 3 cups of rotisserie chicken, using both light and dark meat or to your preference, skin on.
- Chop jicama and celery
- Combine chicken, jicama and celery in bowl.
- Add mayonnaise, mustard, and garlic, mix
- Sprinkle in seasoning and mix until well blended.
- Optional - top with sliced grapes and almonds
