A bacon cheeseburger fresh off the grill is one of those meals that never gets old around here.
During the summer, we use the BBQ as much as possible because keeping the kitchen heat outside just makes life easier.
We make hamburgers all year long, but loading them up with crispy bacon, slices of cheese, onion rings, and all the toppings somehow makes dinner feel more fun.
This version has become one of our favorite burger recipes because it combines everything good about a cheeseburger with the crunch of homemade onion rings.
It's messy in the best possible way.

- Shallots (or onions)
- Buttermilk
- Flour
- Favorite Seasonings
- Oil

Ground beef makes the base for the burger patties, while shredded cheese mixed into the meat helps keep them juicy and flavorful.
Bacon, slices of cheese, and crispy onion rings are stacked on top for extra texture and flavor. You can also add ketchup or mustard, whichever you prefer.
Fresh toppings like lettuce, tomato, pickles, and onion add a little crunch and freshness, balancing everything out.

Double Bacon Cheeseburger with Onion Rings
Ingredients
Hamburgers
- 1 lb Ground Beef
- 1 cup Shredded Cheese
- 4 slices American Cheese
- ½ lb Bacon
- 1 cup Lettuce shredded
- ½ cup Mayonnaise
- ½ cup BBQ Sauce
- Salt and Pepper to taste
- 4 Hamburger Buns
Onion Rings
- 4 Shallots thinly sliced
- 1 cup Buttermilk
- 1 ½ cups Flour
- 1 teaspoon salt
- 1 teaspoon Pepper
- 1 teaspoon Seasoning Salt
- Vegetable Oil for frying
Instructions
Make the Burgers
- In a large mixing bowl, combine the ground beef, shredded cheese, salt, pepper, and seasoning salt.
- Divide the beef mixture into 8 equal portions. Roll each portion into a ball and flatten into burger patties.
- Preheat the grill to medium-high heat.
- Grill the burger patties for 4 to 5 minutes per side or until cooked to your preferred doneness.
- In the last minute of cooking, place a slice of cheese on each patty and allow it to melt.
- While the burgers cook, pan-fry the bacon until crispy. Drain on paper towels.
Make the Mini Onion Rings
- Place the sliced shallots in a bowl with the buttermilk. Let soak for 1 hour.
- In a separate bowl, combine the flour, salt, pepper, and seasoning salt.
- Heat about 2 inches of vegetable oil in a deep skillet or saucepan to 375 degrees F.
- Remove the shallots from the buttermilk and dredge them in the seasoned flour mixture.
- Shake off excess flour and carefully place the shallots into the hot oil.
- Fry for 1 to 2 minutes or until golden brown, stirring gently so they do not stick together.
- Remove the onion rings with a slotted spoon and drain on paper towels.
Assemble the Burgers
- Spread mayonnaise and BBQ sauce on the hamburger buns.
- Add a cheeseburger patty to the bun.
- Top with bacon, shredded lettuce, and mini onion rings.
- Serve immediately with extra onion rings on the side.
Notes
- If you do not have buttermilk, add 1 tablespoon of vinegar to a measuring cup and fill with milk to make 1 cup.
- The onion rings cook quickly, so keep a close eye on them while frying.
- Use your favorite burger seasoning blend for extra flavor.
- Toast the hamburger buns on the grill for added texture.

Tips for Cooking Burgers on the Grill
Cooking burgers over medium heat helps the patties cook evenly without burning the outside before the center finishes.
A little salt and pepper on the outside of the burgers right before grilling adds simple flavor without overpowering the meat.
Try not to press down on the patties while they cook, as that can squeeze out the juices.
Once the burgers are almost done, add the cheese slices and let them melt before removing the patties from the grill.

Store leftover cheeseburgers and onion rings separately for the best texture.

Keep toppings like lettuce, tomato, pickles, and sauce separate until ready to serve again.
Store the onion rings in a separate container lined with paper towels to help absorb moisture.
To reheat, warm the burgers in a skillet, oven, or air fryer until heated through. Reheat the onion rings at 375°F in the oven or air fryer for a few minutes to crisp them back up.
