Instructions
Make the Burgers
In a large mixing bowl, combine the ground beef, shredded cheese, salt, pepper, and seasoning salt.
Divide the beef mixture into 8 equal portions. Roll each portion into a ball and flatten into burger patties.
Preheat the grill to medium-high heat.
Grill the burger patties for 4 to 5 minutes per side or until cooked to your preferred doneness.
In the last minute of cooking, place a slice of cheese on each patty and allow it to melt.
While the burgers cook, pan-fry the bacon until crispy. Drain on paper towels.
Make the Mini Onion Rings
Place the sliced shallots in a bowl with the buttermilk. Let soak for 1 hour.
In a separate bowl, combine the flour, salt, pepper, and seasoning salt.
Heat about 2 inches of vegetable oil in a deep skillet or saucepan to 375 degrees F.
Remove the shallots from the buttermilk and dredge them in the seasoned flour mixture.
Shake off excess flour and carefully place the shallots into the hot oil.
Fry for 1 to 2 minutes or until golden brown, stirring gently so they do not stick together.
Remove the onion rings with a slotted spoon and drain on paper towels.
Assemble the Burgers
Spread mayonnaise and BBQ sauce on the hamburger buns.
Add a cheeseburger patty to the bun.
Top with bacon, shredded lettuce, and mini onion rings.
Serve immediately with extra onion rings on the side.
Notes
If you do not have buttermilk, add 1 tablespoon of vinegar to a measuring cup and fill with milk to make 1 cup.
The onion rings cook quickly, so keep a close eye on them while frying.
Use your favorite burger seasoning blend for extra flavor.
