This Apple Pie Chia Pudding recipe is simple yet delicious and the perfect treat to give you a healthy alternative to those holiday cravings

I kicked off the first of September yesterday with my new Fall Design Series, and today I'm here to share the first Fall Recipe of the year! One of the best things about Fall is the scents. There's nothing like the smell of freshly cooked apples and cinnamon. Today I'm joining some lovely bloggers to bring you my newest Fall-inspired recipe - Apple Pie Chia Pudding! I got in to Chia Pudding when we started Keto a little while back, and I'm sad to report we've actually taken a break from Keto because we got a little busy and just couldn't keep up. However, we'll jump back on that train soon! However, during that time I started eating Chia Pudding. My mom was actually the first one to introduce me. Admittedly it's not everyone's cup of tea, but I have to say when you take the time to add some flavors to the pudding it makes a world of difference from just your standard Chia Pudding.
For this Recipe I wanted to add in a Fall fruit, so naturally I thought of apples, which clearly leads to apple pie. We are even going to make our very own Apple Compote as a topping!
Using Almond Milk in Chia Pudding
The base for Chia Pudding is a milk of some kind,however you can use any kind you want. Some options include: whole milk, coconut milk, cashew milk, etc. Almond milk has become my favorite. You can get my recipe for fresh Almond Milk here, but if you are in a hurry any will do.
*Note: If you use my homemade almond milk recipe it does contain honey and vanilla, so you may want to adjust the Chia Pudding to taste, but it shouldn't affect it very much if you decide not to change anything. It's a pretty subtle flavor/sweetness in the milk.
How to Make Apple Pie Chia Seed Pudding
Chia Seed Pudding is one of the easiest things to make. It's all about stirring the ingredients together, and adding the toppings of your choice. Toppings are not necessary, and I eat the pudding without them all the time. But if you really want to treat yourself to a dessert then take the time to enjoy your toppings!
Fresh Apple Compote
What really makes the recipe takes as much like apple pie as you can make chia seeds taste is the fresh apple compote. This has to be the simplest apple compote you can make, and I did that for a reason. This recipe is meant to be quick and easy. I just cooked the chopped apple pieces in coconut oil, honey, and sprinkled with cinnamon. I prefer my apples to remain a little crunchy as a contrast to the pudding, but you can cook them to your desired tenderness!
Apple Pie Chia Seed Pudding
This pudding is actually made with applesauce. Bonus points if you use homemade applesauce! After the compote is ready and your chia pudding has been refrigerated you just simply add the compute to the top of your pudding and enjoy. I like to garnish with a fresh apple slice and a dash of cinnamon.

Fall Chia Seed Pudding Recipe
Apple Pie Chia Pudding Fall Recipe
Ingredients
Chia Pudding:
- 1 cup Almond Milk store bought or homemade
- ¼ cup Chia Seeds
- ½ tsp Vanilla
- 1 tbsp Maple Syrup
- ¼ cup Unsweetened Applesauce store bought or homemade
- ½ tsp Cinnamon divided
Apple Compote
- 1 Apple diced
- 1 tsp Coconut Oil
- 1 tbsp Honey
- Cinnamon
Instructions
- Chia Pudding
- In a large mason jar whisk together all the ingredients for the pudding. Put a lid on the mason jar and refrigerate for at least 30 minutes. Preferably let it sit overnight.
Apple Compote
- Heat Coconut Oil over medium heat in an iron skillet
- Add apple and stir until coated in oil
- Cook covered for 5 minutes
- Stir in Honey and Cinnamon, cover and let cook until desired tenderness is reached
