- 1.5 pounds Chicken Breast (boneless and skinless)
- 2 tbsp Chopped Cilantro
- 3 tbsp Olive Oil
- 1 ½ tsp Garlic Powder
- 1 tsp Chili Powder
- ½ tsp Cumin
- 1 tsp Oregano
- Salt and Pepper to taste
- 2 tbsp fresh Lime Juice
- 1 Green Bell Pepper sliced
- 1 Red Bell Pepper sliced
- 1 Jalapeño sliced (optional, for more spice)
- 1-2 Shallots sliced
- 8 Flour Tortillas
Instructions
- Preheat oven to 400 degrees.
- 1.5 pounds Chicken Breast into strips.
- In a medium-sized mixing bowl, add chicken, 2 tbsp Chopped Cilantro, 3 tbsp Olive Oil 1 ½ tsp Garlic Powder, 1 tsp Chili Powder, ½ tsp Cumin, 1 tsp Oregano, and 2 tbsp fresh Lime Juice.
- Toss the chicken and seasoning with tongs until evenly mixed.
- Thinly slice the 1 Green Bell Pepper, 1 Red Bell Pepper, 1 Jalapeño, and 1-2 Shallots. Add to the bowl with the chicken and spices.
- Pour the chicken mixture onto a baking sheet and spread it out evenly.
- Bake at 400 degrees for 20-25 minutes or until the chicken's internal temperature reaches 165 degrees F. Then place under broil for about 5 minutes.
- Serve with warm tortillas. Additional topping Ideas: fresh sliced avacodos, pico de gallo, shredded cheese, sour cream.
