Easter is hopping up on us and I have an adorable, yet delicious recipe for Easter Cucumber Sandwiches with a Carrot and Herb Cream Cheese Spread that I know you and your family are going to love. My family truly adores this recipe, and I am so excited for you to try these cute little Easter Cucumber Sandwiches for yourself! They are super easy and come together quite fast. I know you are ready for the recipe, so let's get cooking!

With a bunny and Easter egg cookie cutter, cut an equal amount of bread for each sandwich and set aside. Save all your extra bread pieces because tomorrow I will be back with a recipe that uses all of the extra bread. In a medium sized bowl add cream cheese, shredded carrots, fresh chopped chives, fresh chopped parsley, and seasonings. Combine all ingredients and mix well. Cut an English cucumber in half and slice thin slices of your desired amount of cucumbers. Spread the carrot and herb cream cheese on both sides of a sandwich. When spreading the carrot and herb cream cheese on the bunnies don't forget to do the mirror side of the bunny, just speaking from experience 🙂 Place your desired amount of cucumber slices on each sandwich and top with the other the matching bread cut out.
Easter Cucumber Sandwiches
Ingredients
- 1 loaf of extra thin sliced bread
- 8 oz Cream Cheese softened
- ⅓ of an English cucumber
- 3 TBSP finely shredded carrots
- ½ TBSP fresh chives finely chopped
- ½ TBSP fresh parsley finely chopped
- ¼ tsp garlic and herb seasoning I use McCormick
- salt and pepper to taste
Instructions

So sweet! I hosted a Mad Tea Party and originally planned to cut the 7 types of tea sandwiches each into different shapes. Your bunny would have been perfect for the White Rabbit. But, alas, I just didn't have the time. Cucumber is probably my favorite, and they goes great with sliced salmon too --- I used both in a unique sandwich cake which I am thinking of making for an Easter brunch. Pinned!
