- 1 lb Frozen Grilled Chicken
- 1 Red or Green Bell Pepper
- 1 Onion
- 1 cup Mushrooms
- Fajita Seasoning Packet
- Olive Oil
- Flour Tortilla Shells
- Shredded Cheese
- Sour Cream
This recipe has simple ingredients and uses frozen grilled chicken breasts that are already cooked and just need to be heated through - this makes for a very quick dinner!
Instructions:
Slice the vegetables into small bite-sized pieces.
Heat 2 tablespoons of oil in a large skillet on medium-high heat, and add the vegetables to the pan.
Saute the vegetables, stirring occasionally, for about 5-8 minutes.
Next, add the frozen boneless chicken to the pan.
Mix the fajita seasoning and water. Follow the directions on the seasoning packet, mine calls for ¾ cup water.
Then pour it over the chicken and simmer for about 5 minutes.
Serve the fajita mixture on a warm tortilla with cheese, sour cream, and any other desired toppings.
