- Thinly and evenly slice the apples using a mandoline slicer. Remove any seeds from the slices.
- Line two baking sheets with parchment paper.
- Arrange the apple slices in a single layer on the prepared baking sheets without overlapping.
- Lightly sprinkle the apple slices with cinnamon and sugar.
- Bake for 2 to 2½ hours, flipping the apple slices halfway through the baking time.
- Remove the baking sheets from the oven and allow the apple chips to cool completely on the pans. They may still feel slightly soft when warm but will continue to crisp as they cool.

The biggest secret to getting apple chips crisp is keeping your slices thin and consistent. A mandoline makes this really easy because every slice comes out about the same thickness, which helps everything bake at roughly the same rate.
If you don't have a mandoline, you can slice apples with a sharp knife. Just take your time and try to keep the slices as even as possible. If some are much thicker than others, you'll end up with a mixture of crisp chips and slices that are still chewy in the center.
