This blueberry oatmeal bread is soft and flavorful and pairs perfectly with a warm cup of coffee.
Simply bake it the night before, and you'll wake up to a quick, delicious start to the day.

Blueberry Oatmeal Bread Recipe
Makes one delicious and moist loaf.
Ingredients
- ½ cup butter softened
- 1 cup granulated sugar can easily be reduced to ¾ cup
- 2 eggs
- 2 tsp vanilla
- 1 tsp cinnamon
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ cup all purpose flour
- 1 cup old fashion oats or quick oats
- 1 cup non fat plain Greek yogurt
- 1 cup blueberries fresh or frozen
Instructions
- Preheat oven to 350 F.
- Cream butter and sugar.
- Then add eggs one at a time.
- Next add vanilla.
- In a small mixing bowl combine cinnamon, baking soda, salt, flour, and oats.
- Alternate the dry ingredients and Greek yogurt mixing together all ingredients until you have a thick, creamy batter.
- Finally gently fold in your blueberries.
- Pour into a greased and floured loaf pan, smooth out top and sprinkle lightly with oats. Bake for 65-75 minutes or until done. Cool for 20 minutes in the pan, remove from pan, then allow to cool completely.
- Enjoy!
Notes
Tip- if using frozen blueberries give them a good rinse before folding them in the batter. This prevents the batter from turning blue.

Have u ever tried a gluten free flour? I am going to make this soon but an considering using a different flour so I can share it at work, two co workers have a pretty bad allergy. If u , or anyone else, has tried it with an alt flour, which would u recommend? First-time-gluten-free-baker.

I know Bob's Red Mill has a gluten free all purpose mix. Although, I have never made this recipe using the mixture, I have heard of people using this flour for an alternative in their baking recipes. Hope this helps, thank you so much for stopping by!

Great recipe! Made first loaf after picking 12# of berries, didn't have any yogurt so used sour cream ...wonderful. Just made a double batch. Also used 1/2 c whole wheat flour with the all purpose
