Summer is here! It's finally getting hot here in Wisconsin, and as a girl who was born and raised in the South... it's time for some Iced Tea to help keep us cool and hydrated!

For this recipe I will be using Bigelow Tea because I love it's fresh flavor. It has such a clean taste to it! I'm swooning over all the flavors that you can choose from to make delicious iced tea! For this I specifically used their English Teatime because it is just your basic black tea, which is great for mixing with a lemon and mint flavor!
Obviously since I'm from the South, this will be a sweetened tea, but if don't like sweetened tea, or are trying to cut back on sugar, just simply eliminate all sugar from the recipe, even in the ice cubes. We drink unsweetened tea around here quite a bit. It's a great way to give the kids a special drink without all the sugar! : ) We all know what happens when you mix kids and sugar!
Let's start with the Lemonade Ice cubes
Ingredients:
- approx. 2 lbs of lemons, or enough to get you 1 cup of juice
- 1 c. sugar
- 4-5 c. water, divided
- Fresh Mint
Instructions:
- Squeeze your lemons until you have ¾ - 1 cup of lemon juice (taste preference)
- Then, in a saucepan heat 1 cup of sugar and 1 cup of water water until sugar is completely dissolved.
- Pour the sugar water into a pitcher and add the lemon juice. Stir, and let sit for a few minutes.
- Add in 3-4 cups of cold water (depending on how strong of a lemon flavor you want, just remember we will also be sweetening the tea a little too)
- Stir, and let chill in the refrigerator.
- While that's chilling, cut up a few mint leaves into tiny pieces and place in the bottom of an ice tray.
- Pour your lemonade on top of your mint leaves into the tray and place in freezer until frozen.
While those are freezing lets start making the tea!
Bigelow Iced Tea Recipe
Bigelow Iced Tea Recipe w/ Lemonade Ice Cubes
Ingredients
- - Homemade Lemonade Ice Cubes recipe above
- - 5 individual bags of Bigelow English Teatime
- - ¾ cup sugar
- - water
Instructions
- Bring 2 cups of water to a boil, then turn off heat
- Add your teabags to the water and let steep for 10 minutes
- Add 1 cup of sugar (or to taste) to your tea pitcher, and add tea
- Stir until sugar is dissolved
- Fill pitcher to make 3 quarts of tea
- Let chill in refrigerator
Now just simply add your ice cubes and you have a fabulous Iced Tea to take outside and enjoy those summer evenings. The best part? No more watered down tea! As your ice cubes melt, your tea stays cold longer, and is infused with a wonderful lemon mint flavor! Love ice tea in the summer!! I drank 3 glasses at lunch, but I sweeten mine with Truvia. You should be happy that you are in Wisconsin. It was 111 degrees today in Houston. Super hot!! That's probably why I drank so much tea and water. LOL!! Thanks for the ice cube idea. Perfect!!
