I know grilling is popular in the summer. But let's just talk about how grilling is ALWAYS good, no matter the season. I mean maybe not in the -20 degree wind chills we get here... but it's still always good. And because of that we try to grill as much as possible while the weather is nice. Plus this recipe is a must add to your weeknight routine. I'm not really one to toot my own horn, but GUYS, this Balsamic Grilled Chicken Recipe is just so easy and so good...and did I mention healthy? Remember how I talked about making some lifestyle changes?? Well... this recipe sure makes that process easy, because we all deserve to enjoy our meals!
You can find the full recipe at the bottom of the post, but let's talk about the process a little bit here. I suggest mixing up the marinade first, whisking it well, and then pouring it over the chicken. This allows all the seasonings to properly distribute throughout the marinade.
I suggest marinating for no more than an hour with this much vinegar. I've done it before and it essentially starts to cook the chicken and can give it a weird texture.

One of my favorite things about this recipe is how versatile it is. You can slice it up and eat it as is, or use it to top off other dishes. It's amazing to top off a salad with.
Balsamic Grilled Chicken Recipe
Ingredients
- ½ c. Balsamic Vinegar
- ⅓ c. Avocado Oil
- ½ Lemon juiced
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic Powder
- ½ tsp Smoked Paprika
- 4 Boneless Skinless Chicken Breasts
Instructions
- Add first 7 ingredients into a bowl and whisk together until thoroughly mixed. Then add to a 1 gallon freezer bag.
- Add Chicken to marinade, remove air from baggie, and seal.
- Place baggie in fridge and let sit for 30 minutes to 1 hour.
- Preheat grill at high heat.
- Cook each side of chicken breasts for 3 minutes.
- Reduce heat to medium, flip chicken and grill an additional 5 minutes or until internal temperature reaches 165 degrees.
- Let rest for 10 minutes, slice and enjoy.
