Simple Popcorn Cake Recipe

- 12 cups Popped Popcorn (no butter) (about 4 bags)
- ½ cup Butter (1 stick)
- 16 ounces Mini Marshmallows
- 1 ½ cups White Cake Mix
- 2 teaspoons Vanilla Extract
- 1 tablespoon Milk
- 1 bag Fancy Sprinkles
Instructions
- Pop popcorn according to package instructions. Once popped, shake the bag upside down to release any unpopped kernels.
- In a large pot, melt ½ cup Butter on medium heat. Add 16 ounces Mini Marshmallows and stir constantly until completely melted.
- Remove from heat. Add 1 ½ cups White Cake Mix, 2 teaspoons Vanilla Extract, and 1 tablespoon Milk. Stir until well combined.
- Pour mixture over 12 cups Popped Popcorn (no butter). Stir until evenly coated. Add 1 bag Fancy Sprinkles, stirring to combine again.
- Spoon popcorn mixture into a greased bundt pan. Press the mixture into the pan with a greased spatula.
- Let it sit for a few minutes, then turn the cake out of the pan onto a platter. Let it sit until it's a bit firmer before cutting and serving.
