Soft lemon cookies made with real lemon juice and zest. Bursting with a bright, citrusy flavor, these cookies are the perfect sweet treat for any occasion.
Cream the butter and sugar together in a stand mixer bowl. Add the egg and lemon zest and mix until well combined.
In a separate bowl, combine flour, baking powder, and salt.
Add the dry flour mixture to the butter, ½ cup at a time, until thoroughly combined.
Shape
Roll pinches of dough into 1-inch balls and place them on a parchment paper-lined baking sheet.
Lightly press down on the ball with the palm of a hand to flatten the dough balls slightly.
Bake
Bake at 375ºF for 8-9 minutes. The cookies will still be light in color.
Let the cookies sit on the baking sheet for 2 minutes before moving them to a cooling rack.
Lemon Glaze
Add lemon juice, powdered sugar, salt, and cream to a medium-sized mixing bowl.
Whisk the ingredients together until the icing is nice and smooth. If the icing is too thin, add a bit more powdered sugar. If the icing is too thick, add more cream.
After the cookies are completely cooled, ice them by dipping the top of the cookie into the icing. Carefully pull the cookie out and place it back on the cooling rack.
