½cupRanch
2tablespoonsExtra Virgin Olive Oil
1tablespoonFresh Parsley finely chopped
1tablespoonFresh Chives finely chopped
Salt and Pepper to taste
4Chicken Breasts
Instructions
Place 8–10 wooden skewers in water and let them soak for at least 15 minutes. It’s a good idea to soak a few extra in case any break.
Slice 4 Chicken Breasts into strips on a cutting board. Try to keep the pieces similar in size so they cook evenly.Pat the chicken dry with a paper towel. This helps the marinade stick better.
In a medium bowl, combine ½ cup Ranch, 2 tablespoons Extra Virgin Olive Oil, 1 tablespoon Fresh Parsley, 1 tablespoon Fresh Chives, and Salt and Pepper. Mix everything together until well combined. Add the chicken to the bowl and toss until fully coated in the ranch marinade.
Let the chicken sit in the marinade while you preheat your gas grill. Even a short rest time helps the flavor soak in.
Thread 2–3 pieces of chicken onto each soaked skewer.
Preheat your grill to medium-high heat.Lightly oil the grill grates so the chicken doesn’t stick.
Place the skewers on the grill and cook for about 20 minutes, turning occasionally so all sides get that golden brown color. You’ll know the chicken is done when the internal temperature reaches 165°F.The outside should be slightly crisp with those flavorful grill marks, while the inside stays juicy with plenty of moisture.
