Precook the mushrooms, onions, and spinach in a skillet.
Add a tab of butter to a skillet and cook the mushrooms and onions until tender. Place the spinach on top of the vegetables and let it sit for a bit to steam cook. After a couple of minutes, mix the spinach into the mushrooms and onions.
Butter the sides of the ramekin dish and fill the bottom with the sauteed vegetables.
Add other ingredients - like chopped ham, turkey, or whatever meat you have.
Crack the eggs directly into the baking dish if you like runny eggs.
Break the eggs into a separate container if you prefer a scrambled egg.
Add some milk, salt, and pepper to taste, stir with a fork, and pour the eggs into the ramekin.
Bake for about 12 minutes, then cut into the eggs to make sure they are done to your liking.
Sprinkle the cheese on top.
Cook long enough for the cheese to melt and turn golden brown.
