Equipment

  • 1-2 Candy Molds
  • 1 Candy Thermometer

Ingredients

  • ¾ cup Granulated Sugar
  • ¼ cup Honey
  • 1 pinch Salt
  • 1 tablespoon Water
  • 1 cup Raw Sesame Seeds
  • 1 teaspoons Vanilla Extract
  • 2 teaspoons unsalted butter
  • ½ teaspoon Baking Soda

Instructions

  • In a medium saucepan, stir together sugar, honey, salt, and water.
  • Heat on medium-low heat until the combined ingredients turn liquid, and small boiling bubbles form on the edges of the pan.
  • Add in the sesame seeds and stir continually for about 5 minutes or until the sesame seeds darken and the temperature reaches 300º F.
  • Remove the saucepan from the heat, and stir in the baking soda, butter, and vanilla. The baking soda will cause the mixture to expand and foam slightly.
  • Spray the candy mold with the vegetable oil cooking spray.
  • Spoon the mixture into the candy molds. It doesn't have to be pretty, just filled.
If you would like you can skip the candy molds, and pour the mixture directly onto a silicone baking mat.
  • Let the candy cool for about 20 minutes.
  • To remove the candy from the molds, turn the mold upside down and tap the back, or twist the mold till the candies drop out.
If you poured the candy, you can break the sheet into small pieces using a meat pounder.
  • Store the candies in an airtight container, and enjoy your treat!
