A recipe for homemade eclairs. You can make them spooky eclairs for Halloween or leave them simple eclairs, a yummy dessert for anytime of year.

Eclairs Recipe

These spooky eclairs are an easy Halloween dessert recipe. They are filled with cream and have a sweet chocolate glaze.

Ingredients

  • 1 cup Water
  • ½ cup Butter - unsalted
  • 1 cup Flour
  • 5 Eggs - room temperature
  • 1 pkg Vanilla Instant Pudding
  • ½ cup Heavy Whipping Cream
  • ½ cup Dark Chocolate Chips
  • 3 tbsp Butter - unsalted

Instructions

  • Put the water and butter in a saucepan and bring to a boil.
    Add the flour all at once, and beat quickly with a wooden spoon until the mixture forms a smooth ball, about a minute.
    Remove from the heat and put the dough in the bowl of an electric mixer.
    Add the eggs one at a time, beating about a minute after each one. The dough will look shaggy at first but will come together and look smooth after a few of the eggs are in there.
    Put the dough into a pastry bag and pipe your eclairs onto parchment-lined baking sheets.
    I like to use a star-shaped tip because I think it gives the eclairs a little more texture.
    TIP: the eclairs will almost double in size while baking, make sure to allow for that!
    Bake at 400 degrees for 10 minutes. Then reduce the heat to 375 and bake for 20 minutes more until golden brown.
    Remove from the oven and let cool on the trays
    Make the vanilla pudding according to the package directions.
    TIP: to make the filling lighter whip a ½ cup of heavy cream and fold it into the cream just before filling the eclairs. So yummy!
    Fill eclairs by filling a pastry bag with the pastry cream, poke two small holes in the bottom of each eclair, and pipe in the creme.
    To make the glaze, melt ½ cup of dark chocolate chips.
    TIP: Want to know how to make your glaze super shiny???? Mix 3TBSP soft, unsalted, butter into the melted chocolate, that's how! It will make your chocolate so shiny and smooth. Everyone will be so impressed!
    Dip the top of the eclair into your shiny glaze.
