The recipe I am sharing today is one I grew up with. This Sausage and Rice Casserole is a comfort food for me and one I can remember my mom cooking and all of us kids sitting around anticipating. It is filling, comforting and delicious! when I am feeling a bit frazzled I can throw it together and get it in the oven pretty quickly. I hope you enjoy this family favorite as much as we do!
Sausage and Rice Casserole Recipe
Ingredients Needed:
- 1 pkg. roll of sausage (I prefer the Jimmy Dean Regular Sausage)
- 1 small onion - diced
- 1 cup Rice
- 1 can of Cream of Mushroom Soup
- 1 can of Beef Consume or Beef Broth
- 1 small can of mushrooms (drained)
- 1 small pkg. slivered almonds (optional)
- Water
Preheat your oven to 350 degrees. In a large pot or sauce pan (one that is also oven safe) add the chopped onion and sausage and brown until the sausage is cooked through. Remove from heat and drain any excess grease.
To the same pan mix in the rice, soup, beef consume (or broth) and mushrooms. Fill up the soup can with water and add that as well. Mix everything together.
At this point you can add the slivered almonds. I grew up with the slivered almonds and really liked having them in there. However, one of my kids does not enjoy it and it is hard to pick out so I usually don't add the almonds when I am making it for my family.
Place in the preheated oven and cook for 45 minutes. When the time is up stir it up. Sometimes the casserole it finished but other times the rice needs a little more time. I will do a taste test and if the rice is not cooked through I will put back in the oven for 15 minutes. This is always enough time.
Serve with your favorite vegetables and fruit and enjoy. My kids especially love this when I serve with green beans and apple slices.
