Hi there, this is Anjanette from MommaYoung at Home. I am so glad to be sharing with you here today on Summer Scraps my recipe for an Easy Homemade Pot Pie! My family has always loved pot pies, but after realizing the amount of sodium each little frozen pot pie I decided it was time to make a healthier version.
Homemade Pot Pie
For this recipe I enlist the help of my slow cooker and two recipes favorites…chicken n’ dumplings and a flaky pie crust. This recipe is perfect anytime specially on a cold winter day. Here is how I make it…
The beauty of this recipe is that it doesn’t have to be exact. Set the Crock pot on high for 6 hours and throw all your favorite ingredients in… chicken, carrots, celery, onion, potatoes, cracked pepper, stock, garlic cloves, bell pepper and parsley. (I throw a couple of frozen parsley cubes I keep on hand.)
For simplicities sake I add cream of chicken or cream of mushroom soup; it thickens the sauce and adds to the flavor. While this is cooking and once you have time, make the flaky pie crust I mentioned above and let chill. If you don’t have time for the chilling process that is ok, it won’t be as flaky but will still be delicious.
Preheat your oven to 400 degrees and get started. If your doing a single 9″ pie, cut your pie dough in half and roll each piece out ( I always thought several ramekins would be cute ). Grease the bottom of your dish and lay the first layer of crust down, make sure to go up the sides even going over the end if possible. Mix a cup of frozen peas into your pot pie mix and spoon into your pie pan. It is ok for it to be slightly full at the top. Lay the second layer of rolled dough to the top of your filled pie pan and crimp at the sides.
Whisk one part egg white, one part water and brush onto the pie. Bake for 30 minutes. Then enjoy!
