Oh I can't even explain how excited I am for Fall! Are you ready? The cooler weather and leaves falling just make me want to bake and cook like I never have before : ) One of my favorite things to make in the fall is crock pot meals. For one they are super easy and reduce clean up time. It starts getting dark earlier and I hate feeling like I'm in the kitchen until midnight when it's only 7! So today I'm going to share with you a super easy recipe!
Crock Pot Chicken Cacciatore
Here is all you need to make this meal:
- 2 lbs chicken
- 1 Box of Kraft Chicken Cacciatore Meal Kit
- Zucchini
- Roma Tomatoes
- Pasta of choice
When you buy the Kraft Meal Kit it comes with all seasonings you need. You just have to add the meat and veggies. This is why I love it so much. It seems like every time I make something I'm always missing one ingredient! Problem solved! They are kind of hard to spot in the store, so this is what it looks like in case you are wondering ; )
As you can see, it comes with all the sauces you need! So once you open the box, you are going to add the Lemon Oregano Sauce in the bottom of your crock pot.
Once it is all in there, add your chicken. I stirred it around so that the chicken was coated in it too. Then after you add your chicken, I added in my zucchini and fresh tomatoes. Now the recipe on the back of the box calls for sliced mushrooms and green peppers, but my kids won't eat either of those, so I just added in my own veggies! These meal kits are very easy to personalize to whatever works better for you! I cut my veggies pretty big since they were going to be in the crock pot for so long, I didn't want them to get too mushy! Just keep that in mind when altering the recipe.
Then you just add your cooking sauce on top of everything and give it a little stir.
Then I cooked mine on high for about 5 hours. There are instructions if you want to cook on low, but I was in a hurry. Another great reason to have a crock pot meal, I am always in a hurry these days! About halfway through I stirred everything and cut the chicken breasts in half. I like to make sure my chicken is well seasoned ; )
Once your ready to eat, just cook your pasta of choice and add all this chicken cacciatore yumminess on top! BOOM! Delicious easy meal ready to go!
My kids absolutely loved it, which is a hard thing to come by since they have gotten so pick this last month! It was easy on me, I just threw everything in there while I was making lunch and it was ready to go for dinner! I absolutely love how easy it is to clean up after crock pot meals. I mean, anyway I can do less dishes is ok with me!

Thanks so much Kristen! This seriously took me like 5 minutes to prepare. It's so great to have in the fridge for lunch and my husband to take to work. Super easy! Once we made the pasta, we just dumped it all in together and it was great left over! : )

Absolutely amazing dish. My husband and I eat this over rice and on tortillas. We also froze half of it (minus the rice) and it tasted just as delicious. I personally will use more beans and corn next time.
