Mac and Cheese is the ultimate comfort. All of that creamy cheesy goodness, how could it not be? I sometimes feel like a toddler when we go out to eat and I order the mac & cheese, but it makes my mouth and my soul so happy.
Recently, I found a new favorite mac cheese. Buffalo Mac and Cheese. I have ordered it from a couple different places, and while it was always good it was never amazing. It was either too dry or too spicy (I have a low tolerance for spicy food, but I like the flavor). That is when it dawned on me that I should make it! That is how my Buffalo Chicken Mac and Cheese recipe was born and now it is a family favorite.
This is not a from-scratch meal, but it is fast, easy and sure to please!

- 2 cups Chicken Nuggets cut into bite-size pieces
- 12 oz Pasta
- 6-8 cups Water
- Southeastern Mills Cheddar Cheese Sauce Mix
- ⅓ cup Franks Red Hot Sauce
- 1 cup Shredded Cheese
- 3-4 tablespoons Chopped Parsley
Buffalo Chicken Mac and Cheese Recipe:
There are a couple components to this recipe and to time everything right I have found this order to work best.
Start by baking the chicken nuggets.
In my local grocery store, I found these chicken nuggets in the meat section that are from chicken breasts and are battered and cooked and then refrigerated. All I have to do is throw them in the oven and heat them back up. I think they are as good homemade.
But, if you are looking for a Homemade Chicken Nugget Recipe, I happen to have one.

Start the water to boil, and when the chicken goes in the oven, add the dry pasta to the boiling water. Cook according to package directions until at the perfect pasta softness.

While the pasta is cooking and the chicken is baking, make the cheese sauce. If you want lots of creamy cheesy goodness I suggest using two packets of cheese.
My very favorite cheese sauce is a dry mix from Southeastern Mills. This is not a sponsored post for Southeastern Mills, I just love their mixes and want to spread the word. They are super easy, simply add water to the mix and boil for like a minute, and you're done.

By this time the chicken should be heated through. Carefully (it will be hot), cut the nuggets into bite-size pieces, and put them in a plastic container that has a seal-tight lid.

Add a good pour of Frank's Red Hot to the container, place the lid on tight and give it a good shake. All of the pieces of chicken should be nicely coated.

When the pasta is finished, drain the water and return the pasta to the pot. Add the cheese sauce and the hot sauce to the pot.

Stir until everything is well coated in cheesy yumminess.

Buffalo Chicken Mac and Cheese is technically done, and can be scooped straight from the pot and enjoyed by all, but if you want to step it up and make it look pretty... Pour the mac and cheese into a baking dish and sprinkle with shredded cheese and chopped parsley.

Pop back in the oven for about 5 minutes, or until the cheese has melted. Now, your pretty Buffalo Chicken Mac and Cheese is ready to be served up and devoured.

This meal is also delicious reheated. Just add a tablespoon of water to a serving before microwaving, and you've got a delicious round two!
